Ice Wine …. First Snow in the Vineyards 

A week ago we had our first snow in the vineyards, and perhaps one step on the way to the production of a wine speciality! Ice wine.

''Eiswein'' as it's called in Germany is a sweet, dessert wine speciality, the grapes are left on the vines to freeze and are harvested when frozen, sometimes as late es February. 

Making Ice Wine is risky and often the amount produce minimal. Rich in flavour, Ice Wine is notoriously sweet, so not really my thing but snow in the vineyards really was beautiful and transitory. There and then gone, the sweet flavour of Eiswein lingers perhaps a little longer! Cheers.
